Cruising the Amalfi Coast Weekend Workshop
During this weekend at Parkdale, our Italian food tutor Chico Francesco will bring alive some of the Amalfi Coast’s finest foods that this coastal region has to offer. The Amalfi has been a focal point for some of Italy’s most interesting and celebrated foods. Chico will also include foods from neighbouring Sicily and Sardinia, drawing in their distinctive culinary identity from the islands Moorish past.
On the course you may make dishes such as Lemon & Herb Pasta, Black Pepper & Almond Biscotti, Hot Sicilian Sauce, Baby Cauliflower & Quorn Pommarola and Basil & Lemon Rice. Chico will also teach you how to make perfect Italian breads using the traditional biga and poolish techniques.
As well as making these delicious dishes Chico will talk about the origins and authenticity of the style of eating and why southern Italians eat their pasta dry. He will also discuss regional ingredients including why Lemoncello is the official liquor of the Amalfi Coast, chickpea flour is uniquely used in mistos and the Moorish influences on ingredients such as chilli flakes and cumin being distinctly used in pasata from this region. Chico even shares one of his secret family recipes with you.
The highlight of Chico's weekend is the Saturday evening meal which he hosts in our dining room. Not only will the group enjoy the day's food together but Chico will be sharing his stories from his travels along the Amalfi Coast and beyond.
